I've been enjoying the recipe that I'm going to share since I was a munchkin myself. It used to just be called Grammy's Chicken in our home, but when my husband came into the picture he called it Banquet Chicken...so we merged it into Grammy's Banquet Chicken and it's delicious! We usually make mashed potatoes since you'll have either juice or gravy to use along with a veggie.
Grammy's Banquet Chicken
You'll need...
About 8 pieces of bone-in chicken (thighs & legs) or 4 whole legs
Kosher salt
Pepper
Garlic powder
Curry powder
Paprika
About 1 cup water
Olive oil
3 cloves garlic, finely chopped
For gravy, if desired...
2T flour
1/2 cup water
Preheat oven to 400 degrees F.
Clean your chicken and place it in a single layer in a large roasting pan skin-side down. Season with salt, pepper, and garlic powder. Lightly season with curry powder and paprika.
Turn chicken over so it's skin-side up and season just as above.
Add water to pan without washing off seasoning from chicken and drizzle chicken with olive oil. Top with chopped garlic.
Bake uncovered in 400 degree oven for an hour and a half or until chicken is done.
When chicken is close to done mix up a paste of flour and water (sorry I've never actually measured this! I think it's about 2T flour and 1/2 cup water) if you would like gravy. You can also just use the juice from the pan if you don't want a thick gravy...both are super yummy :)
Remove chicken from pan and then place pan on burner on low if you choose to make gravy. Once juice starts boiling, stir in one tablespoon of the flour & water mixture at a time until you reach desired consistency.
