Dishing It Up Recipe Swap: 5 Ingredient Recipes!



People all over the world get together and share recipes at recipe swaps. Because each person is only responsible for one dish it can be very frugal. The travel and company of sharing the meal at different residences makes it entertaining and fun. Plus, it's a great way to pick up new recipes, tips, and ideas.

With the help and expertise of some other fantastic women bloggers, we've decided to host a virtual Recipe Swap. Hopefully, you will find this virtual Recipe Swap Hop not only fun, but will find some wonderful new blogs to follow and pick up some new recipes and tips. I've included the menu for today's Recipe Swap hop, along with the links to the other dishes. Each blogger contributed a favorite recipe to share with you and we hope that you will enjoy the recipes and the event. Feel free to leave feedback for your hostesses as we plan for future Recipe Swaps. 


Today's recipe for you is my Quick & Easy "Red Sauce" BBQ Chicken!  This is a simple sweet BBQ sauce that has been in my family for many years.  We refer to it in my family as "the red sauce."  It can be used on chicken or pork making either equally delicious!  Every year we have a 4th of July BBQ complete with a cookoff.  This sauce has won the cookoff for us not once, but twice!  We won "Best Ribs" the several years ago and "Best BBQ Chicken" just this year.  So here it is, enjoy!


Quick & Easy "Red Sauce" BBQ Chicken

Ingredients:

Italian dressing (to marinate)
1 -2lbs any chicken (boneless, bone-in) or any pork (ribs, pork chops)
1 cup ketchup
1/2 cup brown sugar
1/2 lemon, juiced

seasonings if desired (salt, pepper, garlic powder, and chili powder)
I like to marinate pretty much everything in Italian dressing!  I think it gives the meat so much flavor and juiciness throughout.  So to get started, just marinate your chicken in some Italian dressing.  This can be for as long as you would like...anywhere from a few hours to overnight.

Preheat your grill, then start cooking your chicken.  I season both sides with salt, pepper, garlic powder, and chili powder.  This is completely optional.  If you have favorite seasonings that you use, feel free to substitute them. 

While the chicken is cooking I make my "red sauce":
To a medium sauce pan add ketchup, brown sugar, and the lemon juice.  Heat on medium until brown sugar dissolves and sauce is warm to make sure everything is blended.  Now I must confess that the measurements above are a rough estimate.  I NEVER measure the ingredients!  I'm usually making all different amounts depending on the number of people we're cooking for.  I would suggest to just taste your sauce and add more lemon or brown sugar to your liking.  And that's it!  Your sauce is ready to go!

Then you just continue cooking your chicken (or pork) until done, and baste with the red sauce for the last 15 minutes.  Yummy!
